The leaves, with a somewhat strong flavor, are used as greens and the seeds are used for pickling and ground to make the mustard condiment which is so popular. Mustard grows wild in California, sometimes reaching colossal heights and presenting a lovely show of yellow flowers in the spring. Use mustard greens as you would collards or kale, and try a little chopped raw in your salad.
