A Guide to Kitchen Utensils

BRASS (A Copper alloy--See also: COPPER.)

Properties: Although brass is very thin, it can be solid and sturdy if it is well designed and well made. Like copper it needs to be lined with tin or silver, except if it is used for teapots in which only water will be boiled.

Cost: Fairly expensive.

Use: Made into chafing dishes, kettles, saucepans, and skillets.
