Spinach

Widely grown in northern Europe and the U.S. (Texas and California being the big producers), this intensely green vegetable is well known for its high iron and vitamin A and C content, and is also an important source of folic acid, one of the B vitamins. Try cooking spinach in only the water which adheres to the leaves after it is washed, or better yet, use it raw in a salad with avocado and parsley.
