Radish

There are several different varieties, and they range in shape from round to oblong; and in color from white, through pink and red, to black. They provide small amounts of vitamins A and C, and traces of minerals. Radishes are mostly eaten raw, but they can be steamed until tender, when they lose some of the piquant taste which does not appeal to everyone. Don't discard the tops--they can be steamed as a vegetable or added raw to salads.
