This much-maligned member of the carrot family was a favorite of the Emperor Tiberius. It is a fair source of vitamins A and C. Choose smooth, medium-sized roots, if possible, and don't cook them in water after washing. Instead, saute them lightly in oil or bake them. Parsnips cook very quickly, and their sweet, nutty taste is unique. Parsnip wine has been a favorite beverage in England for a long time.
