Kale

Kale is a hardy plant and has always been popular in northern European countries. In fact, it is said to improve after it has been touched with frost. Among Celtic people, kale is traditionally associated with Halloween, and it is one of the ingredients of colcannon, a dish customarily eaten in Ireland on that day. Kale is a good source of vitamins A and C. The leaves should be crisp and dark bluish-green in color.
