Within the U.S. it is chiefly grown in California, Texas, and Arizona. Carrots and their juice have a very high vitamin A content and are especially good for the eyes. Buy young, firm, crisp carrots and experiment with them in your cooking--try them in soup, salad, and stew; or fried, baked, and marinated--and don't forget carrot cake!
