Broccoli
Grown largely in California, Arizona, New Jersey, New York, and Oregon, it contains a goodly amount of minerals and vitamins A, B, and C, and is said to be good for the digestion. A fresh head of broccoli has dark green flower clusters and tightly closed buds. To prepare it, steam whole for 8 to 10 minutes (slit the stem for faster cooking), or cut into pieces and steam for a shorter time; but be sure not to overcook it, or it will be a soggy mess. It is delicious with mayonnaise, cheese sauce, sour cream, or just butter. In Great Britain, the term broccoli refers to the cauliflower.
