Lentil

Lentils have a long history of use, and some were found in an Egyptian tomb dating from 2000 B.C. It was for a pottage made of red lentils that Esau sold his birthright to Jacob. Lentils contain as much as 25% protein, and are particularly important in the diet of vegetarians. Dhal is a familiar and soothing accompaniment to curry; it is made from lentils which have been boiled until completely soft, and all the water has been absorbed. They are then seasoned and left to get cold and solidify, so it will be easy to slice with a knife.
