Persimmon or Date-Plum

The oriental persimmon, called kaki, is an important and extensively grown fruit in China and Japan. It is also grown in France, Louisiana, Texas, and California. The fruit tends to be highly astringent until soft. Upon ripening it is rich in flavor and is a good source of vitamins A and C. The fruit is dried, and used in preserves, cakes, and pudding.
